Coming from a Jain family, Nisha grew up with shuddhata and swachchta at the centre of everyday life.
For her, purity was never simply about an ingredient being pure. It was about how food was selected, handled, prepared and served. Cleanliness in the kitchen, care in choosing ingredients and mindfulness about what went into the food were principles she carried throughout her life.

For someone with seven decades of cooking experience, the difference was impossible to ignore. So she decided to do something about it.
